Each one of our recipes is field-tested for months before it ever appears
on our menus. First, we test the recipes for comprehension by our cook
staff. Each recipe must be written very clearly so it can be easily
followed. We test and re-test to carefully adjust the tastes to provide a
flavor balance that is neither too bland nor over-spiced. Finally, after
we have finalized the absolutely best preparation of a selection, then
it's added to our menus.
Our chefs are responsible for quality control in their kitchens. But
every Landry's employee is dedicated to upholding the restaurant's standards of excellence. Our buyers make sure that each cook staff has the finest ingredients to work with and plenty on hand. We're convinced that one of the reasons Landry's Seafood Restaurants open with a splash and do brisk business from day one is because no one "does" seafood quite like we do. And we do it well because we've never compromised our standards.
